January 4th is National Spaghetti Day! It’s the perfect time to share with you my family’s favorite spaghetti dish that I make for dinner. I love cooking this meal because it’s so easy and it takes only 5 ingredients to make it! It’s also perfect for those who are not fans of tomato sauce- like my husband!

  • Spaghetti
  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 tsp red chilli pepper flakes
  • 1 tbsp parsley (chopped)
  • Parmesan cheese

  1. Cook and drain the spaghetti according to package directions.
  2. In a large frying pan, heat up the olive oil, minced garlic, sun-dried tomatoes, and red chili flakes.
  3. Stir and cook on low heat for 1 minute.
  4. Add half of your chopped parsley and remove pan from burner.
  5. Toss spaghetti and remaining parsley into pan. Add salt if desired.
  6. Serve with grated Parmesan cheese on top.

I’ve seen other versions of this recipe include sardines and breadcrumbs. You can make your own version based on what you have on hand! Pair this dish with some garlic bread and a glass of Chardonnay. Buon Appetito!
