RECIPE: AUTUMN APPLE SALAD

Celebrate all the flavors of fall with this autumn apple salad drizzled with a homemade apple cider vinaigrette!

Thanksgiving is quickly approaching and I’ve been wanting to share this salad recipe with you. It’s the dish I bring to our Thanksgiving family gathering every year. I love it because it has minimal ingredients and it is easy to prepare. This salad has great flavor but also great texture thanks to the crunchy apple and the crisp bacon.

INGREDIENTS:

  • Romain lettuce
  • Red apples (I used Fuji)
  • Dried cranberries
  • Chopped pecans
  • Bacon
  • Feta cheese

INSTRUCTIONS:

  1. Cook and chop bacon, slice apples, and chop lettuce.
  2. Add all of the salad ingredients to a large bowl.
  3. Drizzle apple cider vinaigrette dressing over the salad and toss.

Apple cider vinaigrette dressing:

  • 2/3 cup extra virgin olive oil
  • 1/3 cup apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon dijon mustard
  • Salt & pepper

Let’s be honest, the holidays bring a lot of food that isn’t exactly healthy for us. So this salad is great to pair with all of those heavy meals as a way to brighten them up and add some vegetables.  Feel free to switch up the dressing and use whatever your taste buds prefer! For some added protein you can try adding baked or grilled chicken. I hope you love it as much as my family does!
