I’ve been enjoying ice cream treats with my toddler all summer long, but I also like to incorporate some healthy meals into my diet!

Because I’m the household chef, it’s hard to find the time to prepare a good meal for myself. That’s why I’m always looking for something that is quick and easy. This lemon kale salad is simple, flavorful and healthy!


  • Shredded kale
  • Halved cherry or grape tomatoes
  • Croutons
  • Shredded white cheddar cheese


  1. Place the shredded kale into your salad bowl. Top with tomatoes, croutons, and cheddar cheese.
  2. Pour lemon dressing over the salad and toss.


  • Olive oil
  • Lemon juice
  • Grated parmesan cheese
  • Garlic powder
  • Salt & pepper

Feel free to switch up the dressing and use whatever your taste buds prefer! You can even add protein such as chicken or shrimp to this salad. Kale is full of nutrients so you don’t have to feel guilty about eating this salad all summer long!
